Today’s mandatory isolation took me back to the time I would keep up with reports of Molokai, Hawaii.

In the earlier Centuries immigrants were shipping into the Hawaiian Islands, starting a new leaf on life, but without knowing they also brought new diseases to which the local islanders and natives had no immunity. Thousands of Hawaiians died to so many succession of diseases. Tuberculosis, measles, cholera, smallpox, influenza, leprosy which today is known as Hansen’s Disease.

Common like other virus diseases leprosy spreads when a person having leprosy sneezes or coughs. Luckily, Hansen’s Disease was not highly contagious, like today’s  Covid-19.

Before Covid-19, I have been enjoying an independent blog known as Nupepa. Here”s a peek of an article printed in Hawaiian language and translation to English at it’s best which shares a list of leprosy patients sent to Molokai.

I found this poem on a beautiful picture with no name, yet I like to thank the writer just the same. I like to thank my brother and sisters and many caring friends as well, helping make Miss Doris birthday a smiling and happy one on the special day to come

From just a simple cake and ice cream, your magic idea’s have help. Pictures, lei’s, flowers and Marco Polo too. A simple little visit may turn into an hour, and hopefully its busy it might turn into two. I can hear the birthday girl now, giggling as she comes down the hall, to see her gifts and surprises and how you shared your love.

Fun Food – Bananas!

The Banana is a great comfort food, generally it’s sweet and becomes sweeter as it continues ripening. It can be eaten as a raw fruit, it can be cooked in a main meal as well as served as a hot dessert dish. It makes a nice appetizer, healthy snack, yummy breads, cakes,  pancakes, waffles, pies, puddings, salads, shakes, smoothie’s, yogurt recipes, face mask, good for plants, removes warts, and of course makes a great banana split ice cream dish.

Bananas are a good healthy food, it’s gluten-free, low sodium, low saturated fats, low in calorie’s.

Banana’s are found in different sizes, shapes, and colors such as, red, purple, brown, yellow, and green.

This tasty fruit which also has been called a herb, is high in fiber, potassium, magnesium, plus other minerals as well as being acidic in nature.

For some people it shouldn’t be eaten on an empty stomach.

Yup, the banana is one of my favorite foods! I personally have never eaten a banana peel, yet I have used the peels to line the bottom of my roaster, made tea for my plants, and does a good job removing warts from the surface of my skin. And lets not forget the banana boat camp fire recipe for the children except I cook mine in an oven or on the barbeque.

On the Hawaiian Islands as well as Asia and Central America, the banana leaves are used for cooking for its flavor and moisture.  This herb leaf is used as a wrap for cooking food in. Commonly seen in Luau’s, generally a pig, or fish, or a combination of pork and fish with vegetables are  wrapped allowing the food to cook inside. Besides barbecuing or using a pit, stuff or wrap banana leaves can be placed in a casserole dish or meat tray to catch the juices, also since the leaves are porous they are great for steaming food, on top of the stove or a steamer.

Where do I find these exotic leaves for my special dishes. Asian/Chinese grocery stores, most commonly carry them in the freezer department in packs. When I order from a local flower shop, its important to me to let them know how I am going to use the banana leaves, request possible size and freshness is important.

I soak the fresh leaves for a half hour to forty-five minutes depending on size before using. If frozen maybe longer, this process helps the leaves to thaw, moisten the leaf for easier folding, and handling. While rinsing I recheck both sides of the leaf for any bacteria or soil.

I cut the leaves with sharp kitchen scissors to the size required for recipe. When using the banana leaf for decoration purposes such as a liner or food place mat, I just rinse well with warm water, check both sides and pat dry, before lining the serving platters.

When needed I use kitchen twine, extra long wooden tooth picks, when baking plain long wooden tooth picks.  And a stapler allows me to take an extra fold depending on the recipe. http://www.foodandwine.com/recipes/steamed-pork-tamales

Dear Lord, We pray for blessings on this assembly
of extraordinary men and women,
who did things most people don’t want to do,
went to places we would never want to visit,
and lived at length in uncomfortable surroundings
we can’t even imagine.
They did what they did from devotion
to their country’s freedom, honor and reputation.
They endured difficult service
because they are exceptional people,
a cut above the rest of us,
who live safe, comfortable lives.
We pray that you will bless them mightily, Lord.
Lavish on them now

Siskiyou county like many other places have rock hounds of all ages, so having a gem and mineral class at Shasta View Nursing Estate would not be anything new. The class was all about Amethyst quartz crystal.

Quartz naturally occurs in form of a mineral which is desirable.  Beside its beauty and value for many more reasons not stated, quartz is the second most common mineral on planet earth. Minerals are continuously studied in the geological world. And under special condition mineral crystals can continue to grow slowly while undisturbed.

Quartz is a chemical compound of silicon and oxygen, silicon dioxide Si02 also commonly called silica. Classification: Mineral and Specific Gravity: 6.5

Quartz is colorless, transparent as well as a very hard crystalline material, it’s like looking through a glass window. Yet in the gem and jewelry world all gemstones including quartz crystal, other than diamond are called colored stones. So, if it is not a diamond, it’s a colored stone. It’s odd to me, but that’s’ the way it is in the gem and jewelry trade.

Another common name for quartz is rock crystal a six-sided prisms with a six sided pyramid at their ends, thus being a well-formed crystals of quartz. Yet it common to see forms as druzes which are crystalline crusts that only show the pointed terminations.

When quartz contains impurities as a small trace of iron  and aluminum or other minerals it appears in a rainbow of different hues (colors), form vibrant pinks, violets, smoky, brownish-red, tan, orange, colors of the ski and ocean including many more.

The old term “precious” in the gem and jewelry world once was set for stones: diamond, which is not rare but carefully control on how many diamond gems make it to the market world to influence prices, then there is the emerald, ruby, sapphire, and at one time amethyst was on that list, until amethyst became more available for the gem and jewelry world.

Amethyst can range in saturation (brightness and dullness) and value (light and darker), depending on location of country and the particular mine. Specimen’s hues (colors), shape of crystal, inclusions, character of formation and association, identifies the source mine.

The natural coloration is due to a very small  combination of aluminum and iron. Colors from bluish, pale pink, violet, purple, deep dark, purple wine, reddish, and smoky purple.  Amethyst is graded by color, cut, clarity and carat weight. It’s Mohn’s hardness rating of 7. The best stones are faceted.

It’s not only impurities that can change colors in different types of quartz, different heat treatment can enhance, lighten, darken or completely change the hue ( the original color).

AMETHYSTCLASS
Amethyst is also graded by using terms; Siberian, Uruguayan or Bahrain; to represent respectively low to medium to high-grade, regardless of the actual source it comes from. Also due to the mixed of the color distribution in the crystals, amethyst is often cut as brilliant round cuts to maximize the color. And when the color is better distributed other cuts are used.

This purple crystal quartz is considered the Zodiac Sign of Aquarius: January 21st – February 19th. Amethyst is also given for the 4th and 6th year of a marriage anniversary.

Amethyst  associated symbolism is peace, inner strength, courage, balance and stability. It was the perfect gift for each of the ladies that attendant the class that afternoon.

Dining at a depot station in Oldtown Medford, Oregon, was new for me. Viewing the surrounding building I never thought this historic building was a landmark train station since 1910.

Nostalgically it was named in honor of all the men and women whom worked in the service industry servicing passenger aboard the trains.

Back in its day the rail service was one of the main transportation s which explains why in 1910 this brick building was constructed with the city fathers approval,

but during the great depression era in America starting in the 1920’s lasting into the late 1930’s, the rail service declined as well as Medford’s depot services.

To day we visit the renovated historic building with new life, while the owners tried their best in keeping the historic architectural elements.

“Gratitude is the best Attitude”

Thanksgiving is just around the corner, for most it means a big meal with friends and family. For some it is a day to stand in line with a secret hope, a dream, or possibly a distinct memory comes to mind.

As the line moves forward, a grin from the  person across the table serves a portion of the special meal of the day, endearing the words Happy Thanksgiving is softly given.

For some homeless individuals their situation is documented, while other remain anonymous, yet homeless or not the felt emotion is the same.

Such as what does Thanksgiving bring to those whom are in a care home or senior living home. The luck of not being homeless is a welcome gratitude, when the mind allows the kindness of the people surrounding them, welcomes the knowing.

Many are family-less, sharing little pieces of the youth puzzle that once was, among fellow acquaintance or a friend taking time to hear his or her voice.

Thanksgiving is just the way it reads, giving-thanks within the moments of sharing, a special thought, the little grin, a kind word.  The unknown author of “Gratitude is the best attitude” speaks so clearly and simply for all mankind and me.

May this one moment of the Thanksgiving Day bring a special memory for you and yours.

On a typical day this tiny town of Etna located in Scott Valley is a calm modest place, until Jammin on Main Street day comes around. The street is busting with visitors, vendor booths, crafts, food stands, arts and games for the kids,

With main street closed to traffic, people from near and far are having a great time sampling local refreshments as country and blue grass music play. American roots music has a mix of everything, like Grand Ole Opry, traditional instruments such as banjo, fiddle, guitar, bass, mandolin, are played with meaning and fun..

Shasta View Nursing Center Lawn Sale

Something new, somewhat new, like-new, or usable can always be found at lawn sales, like the Shasta View Nursing Center, Weed, Ca.

This year it was nice to spend part of the day visiting with Doris Rhodefer and other residents while the sale was taking place.
The morning air was pleasant and early bird shoppers were already on the scene.

So many things were donated, rare and unusual collectible items. Interior furniture such as divan, oak filing cabinets, lamps, television, chairs and more seem to be the first items to go.

The elders were assisted by a CNA strolling them along the tables. Watching from the distance the expression upon their face was child-like when they found that special prize and if or when the item wasn’t within their reach the CNA would gratefully while carefully hand the item to them so they could eye it more closely.

Residents would wonder in and out and around with their walkers as Doris did while having a conversation with her son Ron, later settling under a nearby shade tree. Other curious residents quickly peak at the lawn and people within the landscape and with no interest return to the air condition parlor within the building.

A moment of haggling over prices filled the air as the buyer laugh and smiled stating her donation, and yet during the same time young at hearts were busy hunting through a mountain of stuff animals to pick only one small toy to take home as a prize.

Cold refreshment on ice welcome visitor shoppers, hot dogs and chili hot dogs ready to serve, while desserts and more goodies were available for just a small donation.

The topper was the nice crafted items the residents made for the event. Busy hands and busy minds helps the seconds of the day slip by.

Here’s a few secrets to having a successful lawn sale.

  1. Plan several days in advance to price your items, with good bargain prices so the buyer feels they got a great deal.
  2. Signage if the area is spread out..
  3. Check on permits
  4. Advertise, on the internet such as ,
    http://www21.yardhopper.com ,  and http://siskiyou.craigslist.org/ , besides local free booklets, such as.
  5. Team up with other people who are interested.
  6. Timing is important, many people don’t have money
    to spend the last weekend of the month, planning a sale is important.
  7. Have refreshments on hand to sell and for the volunteers helping.
  8. Cash box, for dollars, such as ones, five, tens in paper bills, also twenty dollars in quarters if selling smaller items.
  9. For big-ticket items, hold them for Craigslist when you don’t get close to the price your asking for.
  10. Call in advance to charitable organizations, after the lawn sale you’ll have a place to take your leftover items.

Low Oxalate Acid – Kale

Kale has been an important food since Roman times, and a long time common vegetable in Europe.

Kale is a member of the wild cabbage family, such as collard greens, broccoli and many others.

Lutein and Zeaxanthin is found in many vegetables and Kale is one of them, and besides the protein, fiber and vitamins, kale is low in oxalate acid.

For myself Kale was one of those greens which never ventured beyond a garnish. Spinach (high in oxalate acid) was my favorite green until I was advised to try a new eating style, meaning eating foods on a low oxalate acid list.

So, when I left the doctor’s office I held a two page list of vegetables, not to eat due to the high oxalate acid. In hand and out the door I left with a list of foods I once called all my favorites, veggie’s and nuts. Wow!

So!, I did lots of homework gathering information of do’s, don’ts  and  why, eat low oxalate veggie’s, as well as seasonings to use in smaller amounts,  All this information was cross related to help people, with one type of disease or pain.

Finding tested and proven meals was few, yet once the understanding of change
was accepted and taste was accomplished, making meals was becoming enjoyable again.

Example: Replacement for red tomatoes, is yellow tomatoes
spinach           is kale
raisins             is golden currants  and the list goes on….

Looking for good informational Low Oxalate Acid cookbooks are few, yet one I can recommend is “The low Oxalate Cookbook Book Two, by The VP Foundation”  http://www.thevpfoundation.org/vpfcookbook.htm .

The recipes in the cookbook are done by individuals, with little bits of stories, and the front
part of the book gives up to date or latest information of test completed.

With that said, My replacement for spinach became Kale. There are many varieties of kale but most are coarse like cabbage so cooking it takes a wee bit longer, unless I remove or cut out any large ribs from the center of the leaves. I make healthy juices, smoothies and sautéing, so replacement of spinach was do-able. One of my favorites is kale in minestrone soup.

For myself, I do something a little different with kale that is not found in many recipes, when the ribs in the center of the leaf are large I pre-cook or blanch the greens and put it in the refrigerator so its ready for smoothies to reduce the crunchiness.

Better Homes and Garden has a nice white bean soup dish with kale that I can cook
ahead of time, for later outings such as day trip or camping,
it keeps well in the ice chest, or hot food carrier dish.

For myself, I try not to waste any part of the kale, if the stems are thick,
I remove the leaf for lighter cooking and use the stems for stews, soup, or juices.

Yreka Saturday Farmers Market & Siskiyou Pins and Needles

This June 13th,  I had the luck beings part of the Yreka’s Saturday Market on Miner and Broadway, as well as having the honor  meeting up with a fellow business classmate of mine from College of the Siskiyous.

On class days we would have a chance to visit and she shared her goals. As time passed we lost contact but here we were and I see how happy she and her husband are with their business named Siskiyou Pin and Needles.

They offer an affordable price for each item they sell. I know, because I personally requested a piece and can’t wait till I see it next week.

Easter for me was dressing up and feeling so pretty, it was a

day of different colors. My mother and I would go to church, while

dad stayed home to watch my younger sister and brother.  I remember

going places after we had our own hide and go seek egg hunt, which

we colored ourselves and the egg. As I grew older decorating eggs stayed

my favorite thing, except I got to hide the eggs as well.

So enjoying the outings and meals became the norm.

When I visit Doris at Shasta View Nursing Home,

there is a waiting for the unspoken which is no secret.

Support and caring is met everyday at Shasta View now with new management,

and she feels she is well attended too, by her nurses and caring staff.

I feel they help keep the body and soul together.

This Easter day allows the residents to enjoy the coming of another special day,

and maybe allows them honor the yesterdays in faith and love. No matter what

“Knowing Yourself”

Knowing-your-self-

For myself, I always felt their was a slight difference between the words believe and knowing, but I didn’t realize how much until I looked in my
Roget’s International Thesaurus.

I have never had any problem believing in the Holy Spirit,
Spirit, a greater kind energy than I.

I believe in my friends and family.
My beliefs are depended upon what I had learned
and
what I am still learning today.

I have a set of values that I like to stand by,
so I can like myself every moments of the day.

I am like many other people who have goals,
and when I believe something so deep,
this is when I have the knowing.  “I just Know.”
